Cheddar Broccoli Soup Recipe

Broccoli cheddar carrot soup is such an easy and fast meal. It’s decently nutritional and can be used as an appetizer for anything because it’s cheesy and really tasty. 

 

For this you will need the following ingredients: unsalted butter, 12 oz chopped broccoli, ½ cup of shredded carrots, one quart of heavy cream and one quart of chicken broth, but if you want a thinner consistency add a cup more of each, ½ cup of onions (optional), 3 smashed garlic cloves, 8 oz of shredded cheddar cheese, ½ tsp of black pepper, ½ tsp paprika and 1 tsp of salt. For the seasonings, it all depends on your taste, those are just for you to get an idea of how much you would need. This amount is for about four servings. 

 

Instructions: 

  • Heat up your pan on medium heat and add the butter. If using onions, add them along with the garlic so they start to fry a little. 
  • Add the heavy cream with the chicken broth and wait until it starts to bubble. Then add the broccoli.
  • When the broccoli is somewhat tender, add the seasoning and carrots. Leave it on the heat for a little more.
  • Lastly add the shredded cheese and cover the pot so it melts. 
  • Stir and serve with the bread of your choice.
