Blueberry Muffins to Warm the Soul

Cheesecake Blueberry Muffins 

Ready in 20 minutes

Serves 4 people


  • 2 ½ cups of flour 
  • 1 tsp of salt 
  • 2 tsp of baking powder 
  • ¼ cup of butter (unsalted and melted)
  • ¼ cup of vegetable oil 
  • 1 cup of whole milk 
  • ¾ cup granulated sugar 
  • ¼ cup of sour cream
  • 2 tsp of vanilla extract
  • 1 tbsp of lemon zest 
  • 2 eggs 
  • ¼ cup lemon juice 60ml
  • 8 ounces of fresh blueberries (or more, up to you!)

For the crumble toppings

  • ½  cup of flour 
  • ½ cup of granulated sugar
  • ½ cup of softened butter


For these delicious muffins, you will need ingredients you most likely already have at home. Prep time is about 20 minutes, so if you want to hurry and make these for breakfast, you can accompany these delicious blueberry cheesecake muffins with a homemade latte!


For starters, mix all of your dry ingredients in a large mixing bowl. You will need flour, a pinch of salt, and baking powder in your bowl. 


Then, move onto your wet ingredients and mix vegetable oil, melted butter, sugar (to your liking), whole milk, vanilla extract, sour cream, cream cheese, and lemon zest (if you would like). Mix your wet and dry ingredients together. 


If you want your blueberries to sink, then disregard this step. But, if you would prefer your blueberries to remain more spread out inside your muffins then toss your blueberries into a bowl and add 2 teaspoons of flour and gently toss them! After that, add them to your mix. 


I prefer to use foil cupcake liners so that I don’t have to grease my muffin pans, but if you don’t have these on hand, just grease your muffin pan with vegetable oil and regular cupcake liners! 


Make sure to fill your cupcake liners at about ⅔ and top off with additional blueberries. 


But WAIT, it doesn’t have to end there, if you want to add a soft crumb topping then keep reading. 


Add half a cup of flour in a bowl, with half a cup of sugar, and half a cup of soft butter. Mix these ingredients so that they are soft, but not liquidy. Add these to your muffins before popping them into the oven! 


Bake time is 12-20 additional minutes at 375 degrees F in your oven. The measurements below are a guide to about 10 medium sized muffins!
