In quarantine, we are finding ourselves with a lot more free time on our hands, which is the perfect opportunity to pick up new hobbies. Lately, I’ve been taking recipe books off our shelves and tried cooking, which I’ve found is a great way to pass the time in isolation. Here are six amazing recipes that I guarantee you’ll love to show off to your family!

 

Breakfast

Whipped Coffee:

This recipe is a must-have for coffee lovers! It blends a glass of milk and ice with a whipped mixture of instant coffee, hot water, and sugar. I find this recipe perfect to use whenever I have a lot of work to do, especially in the morning! It is so delicious!

To start the recipe, you will need:

  • 2 tablespoons of instant coffee
  • 2 tablespoons of white cane sugar (or brown sugar)
  • 2 tablespoons of hot water
  • A small handful of ice
  • Preferred choice of milk
  • Optional: honey

Instructions:

  1. In a bowl, pour two tablespoons of instant coffee, followed by two tablespoons of sugar, and finally two tablespoons of hot water (better if it’s boiling). Mix the ingredients in the bowl until the mixture becomes very thick. You’ll also notice a bronze/caramel color change, which will let you know it’s almost done.
  2. (Optional) Get a glass and drizzle honey along the inside of the cup, just to add extra sweetness.
  3. Fill the cup up with ice and your choice of milk, but leave room at the top for the whipped coffee!
  4. Grab your whipped coffee mixture and scoop it into the cup, and then stir the coffee and milk! Now you have whipped coffee! Cheers!

Dutch Baby:

This delicious and unique pancake is extremely easy to make and will definitely wow your family, and your tastebuds! 

To start this recipe, make sure you have:

  • 3 eggs
  • ½ cup of milk
  • ½ cup of flour
  • 1 tablespoon of sugar (white cane or brown)
  • 4 tablespoons of unsalted butter
  • Optional: pinch of nutmeg, syrup, berries, or whatever you put on your pancakes!

Instructions:

  1. To prep, preheat your oven to 425 degrees.
  2. In a mixing bowl, combine your three eggs with flour, milk, sugar, and a pinch of nutmeg. Mix until you get a smooth consistency.
  3. Melt butter in a skillet and pour in your batter. Place the pan into the oven and bake for 20 minutes. You will know it is done when the pancake is golden and puffy. Then bake for another 5 minutes at 300 degrees, just to finish it off.
  4. Take the Dutch baby out of the oven and onto a plate and serve with syrup, whipped cream, or whatever you enjoy your typical pancakes with!

Italian Grilled Cheese:

This recipe calls for:

  • ½ cup parsley
  • 3 garlic cloves
  • ½ tablespoon olive oil
  • ½ teaspoon chili flakes
  • ¼ teaspoon salt
  • ¼ cup parmesan cheese
  • ½ cup butter
  • 2 slices of bread of your choice (I decided to use ciabatta
  • 1 tomato
  • Fresh mozzarella
  1. In a food processor(or blender), add your garlic, parsley, parmesan cheese, crushed chili flakes, and olive oil. Process the ingredients until they become light and fluffy. This is your herbed garlic.
  2. Mix the herbed garlic with your butter in a mixing bowl. Scoop the compound butter into a container and into the fridge to let it cool.
  3. Slice your tomato and fresh mozzarella.
  4. Spread your garlic butter on both slices of bread, and add two slices of mozzarella onto one slice. Then add two tomato slices on top of the mozzarella. On the other slice, add some more parmesan cheese.
  5. Put the slices of bread together, add some more of the compound butter to the top and put the sandwich in a panini press. If you don’t have a panini press, you can use a pan under medium heat. 
  6. Serve with a side of creamy tomato soup!

 

Mac n Cheese Recipe:

Macaroni and cheese is another American classic with many ways to customize it, making it the perfect opportunity to make every recipe different. This particular recipe is one that profound chef Gordon Ramsay loves to make!

To make this delicious recipe you’ll need:

  • 300g cauliflower florets
  • 300g macaroni noodles
  • 60g butter (plus a few extra knobs)
  • 4 tbsp plain flour
  • 2 tsp English mustard powder
  • 600ml whole milk
  • Pinch of cayenne pepper
  • Sea salt
  • 100g Cheddar cheese, grated
  • 100g Lancashire cheese, crumbled
  • 100g Cheshire cheese, crumbled
  • 3 tbsp fresh white breadcrumbs
  • 1 tbsp thyme leaves

Instructions:

  1. In a large pot, bring salted water to a boil. Put the cauliflower into the boiling water for 4-5 minutes. Once tender, scoop and drain the cauliflower, while leaving the hot salted water in the pot.
  2. Pour your elbow macaroni noodles into the boiling salt water and stir around for 10-12 minutes, or until the package instructions say. Drain the macaroni, mix with cauliflower and add a few knobs of butter.
  3. In a pan, mix butter with flour and mustard powder under low heat to make a roux. While doing this, preheat your oven to 400 degrees. Slowly add milk while still stirring, until you get a smooth consistency. Then bring the mixture to a boil and stir until it gets thick. Add cayenne pepper and salt.
  4. Then, mix the cheddar, lancashire, and cheshire cheese in a separate bowl and add half to the roux. Add the macaroni and cauliflower and stir.
  5. Put the coated macaroni and cauliflower into a dish to put into the oven. Before putting it into the oven, sprinkle the rest of the cheese on top, as well as bread crumbs and thyme leaves. Bake in the oven for 15-20 minutes. Enjoy!

 

Dinner:

Chick Fil A Copycat Chicken Nuggets:

If you’re like me, you love Chick Fil A, but sometimes, you just can’t make the drive to Grand Junction or Denver. This recipe is perfect for anyone in quarantine who is in dire need of some delicious Chick Fil A chicken!

To prep, get:

  • 2 large eggs
  • 1 cup milk
  • 1 pound chicken breasts cut into 1″ chunks
  • 3/4 cup flour
  • 3/4 cup breadcrumbs
  • 2 tablespoons powdered sugar
  • 2 teaspoons Kosher salt
  • 1/2 teaspoon white pepper
  • 1/4 teaspoon chili powder
  • 3 inches of peanut oil

Instructions:

  1. In a bowl or ziplock bag, add the chunks of chicken breast, milk, and your 2 eggs. If using a bag, just seal at the top and squish it all together. Store in the fridge for 15-20 minutes.
  2. In a small pot, fill with 3 inches of peanut oil to ensure that the chicken breast chunks get fully submerged. Heat the oil to medium-high. You will know it is hot enough when the oil bubbles after dropping a piece of chicken in.
  3. In a food processor, process your breadcrumbs. Then, in a bowl, whisk the breadcrumbs, powdered sugar, Kosher salt, flour, white powder, and chili powder.
  4. Coat the chicken pieces in the breadcrumbs mixture and allow them to dry. 
  5. Fry the chicken pieces 2-3 minutes each, flipping halfway through. Make sure to not crowd the pot with the chicken but rather in small batches or one by one. Once the chicken nugget is golden and brown, remove from the pot. Be careful with this step. Don’t drop the chicken pieces into the oil, because it can splash and burn your skin. Wear long sleeves if you must.
  6. Once removed, place the chicken nuggets on a sheet pan. Enjoy!
